Hi All, with plenty of mangoes in the season why not try some homemade mango pickle with rice Mango1

Serves: 2

Time: 15mins

Prep Time: 10 mins

Ingredients

500gm chopped mango

1 cup of coconut oil

2 tsp of fenugreek seeds

1 tbsp of  Asafoetida (optional)

1/2 tsp salt

2 tsp red chilli powder

2 tsp vinegar

1 tsp lemon juice

2 spring onions

6 chopped garlic flakes

1 chopped medium size ginger

1/2 chopped onion

1 tsp Garam masala

1 tsp of coriander

1/2 chilli powder

1/2 tsp lemon juice

1/2 tsp Salt

METHOD

Heat 5 tbsp oil in the pan add in the mustard , once it crackles add fennel ginger,garlic and onions

once they turn golden brown Add all the spices(coriander,chilli and garam masala ) cook for 5 mins in low flame and then turn off the gas.

Once the mixture cools down add rest of the ingredients into the chopped mangoes.Store it in refrigerator would last a month. Enjoy!
