Easy Bombay potatoes with tomatoes

Yes this is my first post on a simple one pot potato dish with only three main ingredients. Potatoes, tomatoes and onions

Bombay Potatoes


Serves: 2

Time: 15mins

Prep Time: 5 mins


3 big size potatoes

1 chopped onion

2 chopped tomatoes

3 tsp of Coconut oil

1/2 tsp Mustard seeds (optional)

1/2 tsp cumin seeds

1 tsp of ginger and garlic paste

1 tsp Garam masala

1 tsp of coriander

1/2 chilli powder

1/2 tsp lemon juice

1/2 tsp Salt



  • Cut potatoes into 2 cm cubes. Heat oil in a large saucepan add in the cumin and mustard seeds.
  • Then add the ginger and garlic paste then the onions saute until the Onions are golden brown.
  • Add in the potatoes, keep stir frying don’t let it dry (add few drops of water only if it dries).
  • Add in all the spices with¬†the tomatoes, cover and cook until its done (occasionally stir the pot to avoid sticking)
